Warning… there is no redeeming nutritional value to this recipe.
But sometimes special holiday recipes are more about tradition than nutrition, right?
I’m sure there is a more eloquent title for this family favorite, but my girls dubbed it “orange stuff” several years ago and the name stuck.
Typically we serve this at Thanksgiving. There are fewer sweets on the table at Thanksgiving than Christmas, and for those who aren’t fond of turkey and all the fixings, this at least provides a tasty alternative.
- 1 large container cottage cheese (I prefer small curd)
- 1 package orange flavor Jello
- 1 large can crushed pineapple – drained well
- 1 large can mandarin oranges – patted dry
- 3 oz shredded coconut (optional)
- 8oz container Cool Whip
- Pour cottage cheese into a large bowl
- Sprinkle with orange Jello and mix well (until Jello dissolves)
- Mix in drained pineapple and mandarin orange slices
- Mix in coconut, if preferred (we omit this ingredient at our house)
- Fold in Cool Whip (I use about 3/4 container)
- Set in refrigerator for at least an hour
- (Optional) … decorate the top with a bit of leftover coconut
While the salad is best served cold, I have been known to completely forget the Orange Stuff until we are ready to sit down to dinner. It tastes fine if prepared at the last minute.
